Seafood Paella with Quinoa by Matthew Parker

This impressive Spanish one pot with seafood and quinoa is perfect for feeding a crowd at a dinner party.

Recipe: Seafood Paella with Quinoa

Ingredients:

1 chorizo
1 onion
2 cloves of garlic
1 chili
2 tsp paprika
1.25 cups quinoa
4 tomatoes
1.25 cups stock
seafood of choice

Fresh herbs

Preparation:

Cook chorizo with onion and garlic in a pan.

Add paprika, cook for 2 minutes while stirring.

Add and cook quinoa.

Add tomatoes + stock, simmer.

Lower heat and cook thoroughly. 

Cook seafood, add on top of the paella.

Sprinkle with chopped, fresh herbs, enjoy!
